Jalapeño Chutney

A chutney is a condiment that originated in India. It's made by cooking fruits, vegetables, or herbs with ingredients like sugar, vinegar, spices, and sometimes aromatics until the mixture becomes thick and flavorful.

  • 10 jalapeños, finely chopped

  • 1 cup water

  • ½ cup sugar

  • 2 tbsp apple cider vinegar or lime juice (highly recommended)

  • Pinch of salt


Method

  1. Add everything to a saucepan.

  2. Bring to a boil.

  3. Reduce to a simmer and cook for 20–30 minutes, stirring occasionally.

  4. Once the liquid has reduced and it's thick and glossy, remove from the heat.

  5. It will thicken a little more as it cools.

  6. look for a nice color change from one green to another amber green.


If you want it jammy and gooey, you can also:

  • Add 1 extra tablespoon of sugar for more stickiness.

  • Cook it a little longer until it coats the back of a spoon.



Conclusion


This would be delicious with grilled fish, pork, burgers, tacos, or even spread over cream cheese with crackers. 🌶️✨

next time try some bacon-jam-chutney...

  • 500 g bacon, diced with some LEFTOVER crispy bacon

  • ½ cup brown sugar

  • ¼ cup maple syrup (or honey)

  • ¼ cup apple cider vinegar

  • ½ cup water

  • chillie flakes - owen discretion


Put everything in a pot together. Simmer for 30–45 minutes until thick, sticky, and jam-like. Pulse a few times in a food processor IF you prefer a smoother consistency.
